The courses, which are open to everyone, are held by <strong>experts<\/strong> Heinrich Abraham and Michele Da Pozzo, with the assistance of <strong>talented guest chefs<\/strong>.<\/p>\n\n<p>There are four dates again this year. <em>La Cave<\/em> and <em>Cortina Bevande<\/em> will be our partners and we are thrilled to announce that <strong>four famous chefs<\/strong> will be joining Luigi Dariz\u2019s team in the kitchen to prepare four exclusive dinners, promising a truly memorable evening at Da Aurelio.<\/p>\n\n<p><\/p>\n\n<h2 class=\"wp-block-heading\">Dates<\/h2>\n\n<h3 class=\"wp-block-heading\">Tuesday or Wednesday, <strong>2 | 3 July 2024<\/strong><\/h3>\n\n<p><em>Botany and foraging<\/em> | The herbalist <strong>Heinrich Abraham<\/strong>, one of the leading experts in medicinal plants in South Tyrol, will hold two courses on <strong>wild mountain herbs<\/strong>, sharing his knowledge of their properties, active ingredients and how they can be used in the kitchen.<\/p>\n\n<p><\/p>\n\n<h3 class=\"wp-block-heading\">Tuesday or Wednesday,<strong> 9 | 10 July 2024<\/strong><\/h3>\n\n<p><em>Environment and sustainability<\/em> | <strong>Michele Da Pozzo<\/strong>, Forestry graduate and Director of the Natural Park of the Ampezzo Dolomites, will take participants on a journey to discover<strong> local biodiversity<\/strong>, explaining the effects climate change is having on it and illustrating the unique features of the local <strong>flora<\/strong>.<\/p>\n\n<h2 class=\"wp-block-heading\">Programme<\/h2>\n\n<p>Participants are asked to select the date they prefer.<\/p>\n\n<p>The courses will follow the schedule below on all four dates:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>2.30 pm \u2013 meet at the Da Aurelio restaurant in the Giau Pass for a short presentation <\/li>\n\n\n\n<li>3.00 pm \u2013 lesson on the active ingredients of the plants<\/li>\n\n\n\n<li>4.00 pm \u2013 transfer to Melei (approx. 2 km from the restaurant), where you will set off on a guided walk in the Giau Pass. The routes chosen by Heinrich Abraham and Michele Da Pozzo will be different.<\/li>\n<\/ul>\n\n<p>Along the way, the guides will point out the most common edible wild herbs, you will learn how to recognise them and how to use them in the kitchen. &#13;\n<\/p>\n\n<p>The technique used to extract essential oils from the herbs will also be illustrated with the use of a distiller.<\/p>\n\n<ul class=\"wp-block-list\">\n<li>Approx. 6.30 pm \u2013 cocktail at the Da Aurelio refuge. Participants will enjoy a wine tasting with canap\u00e9s (in collaboration with La Cave and Cortina Bevande), while skilled bartenders from \u2018Il Faro\u2019 and \u2018Hotel De Len\u2019 in Cortina d\u2019Ampezzo will also be serving creative cocktails.&#13;\n&#13;\n<\/li>\n<\/ul>\n\n<p><\/p>\n\n<p>Participants who have decided to stay for dinner will enjoy an exclusive menu featuring wild herbs created by Luigi Dariz and his staff.<\/p>\n\n<h2 class=\"wp-block-heading\">Guest chefs<\/h2>\n\n<p>This year, we are thrilled to welcome four guest chefs: Tuesday 2 July we will be joined by Chris Oberhammer (Tilia restaurant, Dobbiaco, 1 Michelin star), Wednesday 3 July Andrea Valentinetti (La posa degli agri restaurant, Polverara), Tuesday 9 July Andrea Irsara (La St\u00fca dla La restaurant, Badia) and Wednesday 10 July Alessandro Favrin (Seda restaurant, Vittorio Veneto).<\/p>\n\n<h2 class=\"wp-block-heading\">Info &amp; reservations<\/h2>\n\n<p>The course and aperitif costs \u20ac70 and the whole experience (course, cocktail and dinner in the refuge in the Giau Pass) \u20ac140. Courses are paid for on the day.<\/p>\n\n<p>Due to the nature of the event, it is for adults only.
